An easy Raita & Dahl Paratha – and creative ways with leftover Indian dishes!

Standard

Vinnys’ Aroma and Spice cooking lessons are meant to inspire but also to be easy.

And Vinnys’ raita really is easy.

She uses a low fat natural yogurt…(but thick Greek natural yogurt is also great)….

…and diced vegetables (like tomato, capsicum, cucumber)…

….mixed with salt, spices, a little sugar …

….and any combination of fresh dill, coriander and mint. (This which really makes this dish.)

Temper the raita with some cooked whole spices (optional).

Raita paired with a dal paratha is an easy entree or a complete light meal.

For the Parathas…

Leftover dal is used to add moisture to the wheat flour (and a little besan flour).

Some extra dried spices are added to the dal before mixing and fresh herbs are added to the dough.

Vinnys explains that this paratha traditionally has an eclectic shape so that can make even beginners’ efforts look good.

A raita and parathas makes a great start to a meal….

IMG_1757

….a raita is the perfect accompaniment to main dishes….

IMG_1778

…and raita with leftover curries, rice and salad in a wrap makes a great Kathi roll….

IMG_1510IMG_1279

….or use raita with leftovers to make a great Thali!

Taste of Bangladesh, Manuka – an easy dinner party take-away option!

Standard

While dining out is good fun, there is something lovely about inviting friends to your home for dinner. Its more relaxed and easier to mingle and meet new people. At home, an open fire in winter or an atmospheric terrace on a summer evening can set the scene for a great night.

IMG_1002

However hosting a dinner party for a larger group can seem very daunting if you’re busy.

But wouldn’t it be great if you could outsource most of the work, without it costing the high price of professional catering.

Taste of Bangladesh offers a very useful take-away family pack that’s perfect for this purpose. Being the lovely, flexible couple that they are, Shafique and Fahana are also happy to work with you on some reasonable swaps to cater for exactly what you need.

image

If you add your own simple salad of cucumber and tomato, cook your own rice and serve your own dessert, then one family pack for $71 can serve up to eight people.

IMG_1046 IMG_1054 IMG_1044

If you don’t live too far away they can even deliver it not to your door for $3 extra.

Start by setting an inviting table and perhaps adding some incense and Indian music!

IMG_1041IMG_1043 IMG_1042

Set out some wine, water and juice and a few nibbles for mingling.

IMG_1045

The Taste of Bangladesh family pack includes 8 entree pieces, four onion bhaji and four chicken tikka, but you can ask Shafique to just include 8 onion bhaji.

IMG_1051

The onion bhaji come with tamarind and mint chutneys and Shafique even includes some complimentary pappadoms!

IMG_1049 IMG_1048

Serve the chutneys and bhaji for entree using your own serving dishes.

IMG_1050 IMG_1053

IMG_1004

By cooking your own rice instead of including it in the order, you can have plenty on hand. Also, if you don’t take the rice, you can ask to upgrade the 4 plain naan to the more tasty cheese and spinach naan instead.

IMG_1057 IMG_1056

Asking Shafique to cut the naan into quarters makes it easier for sharing.

Serve the raita and the mains in your own dishes too.

IMG_1052-0

Some of the four set mains ( beef vindaloo, butter chicken, lamb saag and minja handi (a cheese and vegetable dish)) be swapped, if you choose similarly priced dishes.

If you have more than 6-8 people you might want to order two or more family packs. If you do it can be handy to get more of the same dish, for example three Chicken Dum Murfh, three Fish Bengali and two palak Paneer work well.

IMG_1055

Finish with a simple dessert of your own, made ahead of time or even some gourmet icecream served in glassware and garnished with a few frozen berries.

IMG_0995 IMG_1003

Finish with tea and coffee and a chocolate to round it all off.

IMG_1058

For a small amount of planning and organisation and some big (but not too pricey) help from Taste of Bangladesh you can add your own special touches to a delicious Indian feast and create a night to remember!

Bollywood Dimensions, Braddon – a good shared menu for under $15 with corkage)

The plan to share dishes at Bollywood Dimensions works.

The two dals are full flavoured and rival the chicken and lamb dishes. Ordered in generous side sizes ($8.90) they add variety to the meal without increasing the price.

IMG_1134

The Kheema (lamb stuffed) Naan is better than the Paneer Naan  and one serve of rice is plenty for two people.

Do ask for mild spice level to cater for different tastes as even this is quite spicy.

There’s a 25% Entertainment Book discount of the food and corkage ($5 per bottle) and more than one voucher can be used (although there’s certain conditions).

The restaurant is very flexible and is happy to work with the shared menu.

IMG_1135

While the decor is mid range when dining with a group the atmosphere can be quite festive.

IMG_1136

A recommended menu for groups of four people under $15 per person with the discount ($20 without) is….

2 serves steamed basmati rice $3 per serve.
1 serve Awesome Butter Chicken (Mild) $18.50 Boneless Chicken pieces cooked in Tandoor and finished in a creamy butter and tomato sauce. A creamy and fairly mild dish.

IMG_1021 IMG_1022IMG_1027 IMG_1023

Aroma & Spice – An Indian vegetarian Cooking Journey right here in Canberra!

Standard

If you’ve ever wanted to master a few great authentic Indian dishes to wow your friends and family, without spending a fortune, then Vinnys’ home style cooking lessons, is for you.

Spending time with Vinnys in her kitchen as she shares her favourite recipes and provides great tips about where to source the ingredients locally, is a treat.

Being a busy, working woman, she has adapted her mothers’ timeless recipes to be quick, easy and healthy, while still retaining their unique and special flavours and textures.

Indian home style cooking is healthier and more flavoursome and varied than many of the well-known restaurant dishes which also tend to be higher in fat and salt.

This delicious North Indian Potato, Spinach and Tomato Curry is great served with rice for everyday meals….

…..but it also becomes very special when served with hot puffy Pooris.

A series of five lessons with Vinnys covers a range of dishes including vegetable curries, dahls and versatile dips as well as classic breads like pooris, parathas and chapattis.

Booking is flexible and you can attend one of more classes at $25 per class ($120 for five).

Grab a few friends and make it a social event.

Groups are kept small so that everyone has a good opportunity to learn and take home the dish of the day to enjoy for dinner.

It’s like having a good friend share the secrets of their special recipes and step you through to create them yourself.

Sundays 4pm in Bruce.

Petra Palace Lebanese Restaurant, Phillip – delicious food

Standard

Recently opened last year, Petra Palace is a relative new comer to Canberra world cuisine dining, but one well worth seeking out as the food is simply delicious!

Tucked away in Colbee Court Phillip, like many of Canberra’s suburban gems, it offers easy at the door parking and good value prices.

The decor is welcoming and attractive, with some cozy, colourful couches.

IMG_0136 IMG_0137

Great for groups who would like to share a few dishes, it can get a little noisy for the hard of hearing.

IMG_0135

Some of the most delicious dishes include:

Hummus $10 (especially the Hummus Beirut with parsley and chilli) served with the most amazing Lebanese bread.

IMG_0124 IMG_0126

These are probably better picks than the (also nice)  Baba Ganoush $10

IMG_0162

IMG_0125

Falafel (4 pieces) $10 with tahini sauce, pickles and tomatoes.

IMG_0127

Lamb Fatteh $25, Chicken Fatteh $25 or Petra Fatteh $18 – casserole of marinated chicken/chargrilled eggplant, crispy Lebanese bread, spiced rice, garlic, mint, yogurt and tahini topped with pie nuts.

IMG_0163

IMG_0130 IMG_0131

For variety you may want to add…

….a Fattoush Salad $15 cos lettuce, diced tomato, cucumber, capsicum, onion with a lemon and olive oil dressing topped with crispy Lebanese bread….

IMG_0123

…or some kebabs $25 for 3 lamb, chicken or ground lamb and beef kebabs or $20 for vegetable kebabs, all served with rice/couscous/hot chips and a garnish of vegetables.

IMG_0132 IMG_0129

The Cheese Sambousek (4 pieces) $15 Handmade pastry filled with feta cheese is also very good.

IMG_0128

For something sweet the Baklava is nicely portioned at $5 for two small pieces.

IMG_0134

For a group of four people a lovely menu to share would be:

1x Hummus Beirut with Lebanese Bread $10

1x Falafel $10

1x Chicken Fatteh $25

1x Fattoush Salad $15

Total $60 ($15 per person)

IMG_0164

Not BYO, but wine is available by the glass starting at $7.50 and bottles are reasonably priced at $28 -$35.

Canberra Entertainment Book Holders can also get two main meals for the price of one.

Timing a visit for the Belly dancing on Saturday nights would also be great fun.

Open for dinner Tuesday – Saturday 5-10pm

Kusina, Coolemon Court, Weston

IMG_4930

Perhaps, Canberra’s only Philippino restaurant, Kusina has an interesting and unique range of dishes offered for breakfast lunch and dinner.

The Ukoy prawn fritters are always excellent. At lunch they come as a welcome side with the Adobo Set.

Chicken (using wings) or Pork (Belly) Adobo has a uniquely Philippio flavour from a lovely vinegar and soy marinade and the garlic rice that accompanies it is also delicious.

$14.50 in the Express Lunch special.

The Pork Adobo Set is a great pick.

IMG_4929

The Chicken Inasal (Grilled spring chicken with lemon grass, ginger and soy) is also good at $14.50 for lunch.
